1 medium green cabbage, chopped

2 large carrots, diced

2 celery stalks, diced

1 onion, finely chopped

3 cloves of garlic, minced

1 bell pepper (red or yellow), diced

4 cups vegetable broth

1 can (14 oz) diced tomatoes (with juice)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon turmeric powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 5 minutes).

      Stir in the diced carrots, celery, and bell pepper. Cook for an additional 5 minutes until the vegetables start to soften.

        Add the chopped cabbage to the pot, stirring well to combine all the vegetables.

          Pour in the vegetable broth and the can of diced tomatoes (including their juice).

            Season the soup with ground cumin, smoked paprika, turmeric powder, salt, and pepper. Stir everything together.

              Bring the soup to a boil, then reduce heat and let it simmer uncovered for about 20-25 minutes, or until all vegetables are tender.

                Taste and adjust seasoning if necessary; you can add more herbs or spices according to your preference.

                  Serve hot, garnished with fresh parsley or cilantro.
