  • In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, lemon zest, lemon juice, salt, and pepper. Rub this herb mixture all over the chicken, making sure to get under the skin for maximum flavor.
  • In a large mixing bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Toss to coat.
  • Place the herb-roasted chicken in the center of a large roasting pan or oven-safe dish. Scatter the seasoned potatoes around the chicken.
  • Roast the chicken and potatoes in the preheated oven for about 1 hour and 20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are tender. Baste the chicken with its own juices every 20 minutes if desired.
  • While the chicken is roasting, heat the butter in a skillet over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.

  • Once the chicken is done roasting, let it rest for about 10 minutes before carving.
  • Carve the chicken and serve it alongside the roasted potatoes, drizzled with the creamy mushroom sauce.
