Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef over medium heat, breaking it apart with a wooden spoon. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet, and sauté until the onion is translucent, about 3-4 minutes.
Stir in the diced tomatoes (with juice), uncooked macaroni, beef broth, Italian seasoning, salt, and pepper.
Bring the mixture to a gentle boil, then reduce heat to low and cover. Let it simmer for 10-12 minutes, or until the macaroni is tender.
Remove the skillet from heat and stir in half of the cheddar cheese and half of the mozzarella cheese until well combined.
Transfer the mixture to a greased 9x13 inch baking dish.
Sprinkle the remaining cheddar and mozzarella cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let it cool for 5 minutes before serving. Garnish with freshly chopped parsley.
