Instructions
Place the chicken breasts at the bottom of the crockpot. Season them with salt, pepper, Italian seasoning, and dried basil.
Add the diced onion, minced garlic, sliced carrots, and frozen peas evenly over the chicken.
Pour in the chicken broth, ensuring it covers most of the chicken and vegetables.
Cover the crockpot with the lid and set it on low heat for 6 hours or on high for 3 hours.
Once the chicken is cooked through, carefully remove it from the crockpot and shred it using two forks; return the shredded chicken to the pot.
Stir in the heavy cream and the cheese tortellini. Cover and cook on high for an additional 20-30 minutes, until the tortellini is tender.
Taste and adjust seasoning if necessary, adding more salt and pepper as desired.
Serve hot, garnished with fresh chopped parsley for an added splash of color.
