In a large mixing bowl, combine the beef cubes with smoked paprika, dried oregano, garlic powder, black pepper, and salt. Toss well to coat the meat evenly with the seasonings.
In a skillet over medium-high heat, add the olive oil. Once hot, sear the seasoned beef cubes in batches until browned on all sides (about 3-4 minutes per batch). Transfer the browned steak bites to the crockpot as you finish each batch.
In the same skillet, add the diced onion and sauté for about 2-3 minutes, until translucent. Then add the minced garlic and cook for an additional minute until fragrant.
Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, then pour the mixture over the steak bites in the crockpot.
Add the chopped bell peppers to the crockpot, stir everything to combine, and cover. Set your crockpot to cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
Once cooked, taste and adjust salt or seasoning if necessary. Serve hot, garnished with fresh chopped parsley.
