Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
In a mixing bowl, combine the Dijon mustard, honey, olive oil, minced garlic, thyme, salt, and pepper. Whisk until well blended to create the marinade.
Place the chicken breasts into the baking dish and pour the Dijon mustard mixture over them, ensuring they are evenly coated.
Let the chicken marinate for at least 15 minutes for better flavor (or longer in the fridge if time allows).
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and lightly golden on top.
Once done, remove from the oven and let it rest for a few minutes.
Garnish with freshly chopped parsley before serving.
