Instructions
Begin by preparing your crockpot. Spray it lightly with non-stick cooking spray to prevent sticking.
Place the chicken thighs at the bottom of the crockpot, ensuring they are arranged evenly.
In a small bowl, combine the teriyaki sauce, minced ginger, and minced garlic. Mix well and pour this sauce over the chicken.
Layer the sliced bell peppers, broccoli florets, and onions on top of the chicken and sauce. Drizzle the sesame oil over the vegetables.
Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is fully cooked and tender.
Once finished, shred the chicken directly in the crockpot using two forks, mixing it well with the sauce and vegetables.
Serve the teriyaki chicken over cooked rice. Garnish with chopped green onions and a sprinkle of sesame seeds, if desired.
Notes
Use store-bought teriyaki sauce for convenience or make your own.
