1cupmixed bell peppers, sliced (red, yellow, green)
0.5cupred onion, thinly sliced
2piecesgreen onions, chopped (for garnish)
to tastesesame seeds (for garnish)
Instructions
Start by marinating the chicken breasts in a mixture of honey BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Let it sit for at least 30 minutes in the refrigerator for maximum flavor.
Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade (reserve the leftover marinade) and grill the chicken breasts for about 6-7 minutes on each side or until fully cooked.
While the chicken is cooking, heat a tablespoon of olive oil in a pan over medium heat. Add the sliced bell peppers and red onion. Sauté for 5-7 minutes until they are tender and slightly caramelized.
Once the chicken is cooked, brush it with the reserved honey BBQ marinade and cook for an additional minute on each side to caramelize the sauce.
Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
In serving bowls, layer the cooked jasmine rice, sautéed bell peppers, and red onion. Top with sliced grilled chicken.
Drizzle a little extra honey BBQ sauce over the top.
Garnish the bowls with chopped green onions and sesame seeds for added crunch and flavor.
Notes
Marinate the chicken for longer for enhanced flavor.
