Cook the lo mein noodles according to package instructions. Drain and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the sliced chicken breast to the pan and season with salt and pepper. Stir-fry for about 5-7 minutes or until the chicken is cooked through.
Add the minced garlic and grated ginger to the skillet. Cook for 1-2 minutes, stirring frequently until fragrant.
Add the bell pepper, broccoli florets, and snap peas to the skillet. Stir-fry for another 4-5 minutes until the vegetables are tender but still crisp.
Add the cooked lo mein noodles to the pan along with the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together in the pan until well coated and heated through.
Remove from heat and stir in the chopped green onions for added flavor.
Serve hot, garnished with sesame seeds on top for a delightful crunch.
