Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the Italian sausage, breaking it apart with a wooden spoon until browned and fully cooked (about 5-7 minutes). Remove excess grease if necessary.
Add the sliced bell peppers, onion, and garlic to the skillet. Sauté until the vegetables are softened, approximately 5-6 minutes.
Stir in the diced tomatoes (with juice), cooked quinoa or rice, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Mix well to combine all ingredients.
Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly. Top it with shredded mozzarella cheese.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves.
