sweet potato, peeled and cubed

red bell pepper, chopped

onion, diced

garlic, minced

cumin

teaspoon
smoked paprika

tablespoon
olive oil
to taste
salt and pepper
for garnish

Instructions
Begin by heating the olive oil in a large skillet over medium heat.
Add the diced onion and sauté for about 3-4 minutes until it's translucent.
Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
Add the cubed sweet potato to the skillet, seasoning with cumin, smoked paprika, salt, and pepper.
Cook, stirring occasionally, for about 10 minutes or until the sweet potato starts to soften.
Once the sweet potato is partly cooked, add the diced zucchini and chopped red bell pepper to the skillet.
Continue to sauté everything together for another 6-8 minutes, or until all the veggies are tender and slightly caramelized.
Adjust seasoning if necessary, and remove from heat.
Garnish with freshly chopped parsley just before serving.
Notes
Feel free to add other vegetables or proteins as desired.
