  • Start by marinating the chicken breasts in a mixture of honey BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Let it sit for at least 30 minutes in the refrigerator for maximum flavor.
  • Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade (reserve the leftover marinade) and grill the chicken breasts for about 6-7 minutes on each side or until fully cooked.
  • While the chicken is cooking, heat a tablespoon of olive oil in a pan over medium heat. Add the sliced bell peppers and red onion. Sauté for 5-7 minutes until they are tender and slightly caramelized.
  • Once the chicken is cooked, brush it with the reserved honey BBQ marinade and cook for an additional minute on each side to caramelize the sauce.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  • In serving bowls, layer the cooked jasmine rice, sautéed bell peppers, and red onion. Top with sliced grilled chicken.
  • Drizzle a little extra honey BBQ sauce over the top.
  • Garnish the bowls with chopped green onions and sesame seeds for added crunch and flavor.
